Fresh raw veggies with cashew dressing

I just love this combination of uber thin sliced raw veggies with a dresssing, you’d never know they were “raw”

This is what went into my dish but you can play around with the ingredients and quantities

Served 4

1 cup of very thinly sliced red cabbage

1 cup of very thinly sliced white cabbage

1 carrot sliced with veg peeler or in spiralizer

1 courgette sliced with veg peeler or in spiralizer

1/2 red pepper very thinly sliced

3 cups sprouted mung beans

Cashew dressing

1/2 cup plain cashews

pinch chilli powder

1 dessert spoon Tamari sauce (optional)

juice of half a lemon

small clove garlic

1 – 1/2 cups of water

Garnish

Handful of fresh coriander
Handful of chopped walnuts or cashews

Place all of the sliced veggies and beansprouts into a large bowl.

Place all of the dressing ingredients with 1 cup of water into a liquidiser ( I use a magic bullet type blender)

Blitz then check consistency, adding more water if required.

pour over veggies, stir well and finish with fresh coriander and chopped cashews or walnuts
