Watermelon & bean salad

This is a great and unusual way to use Watermelon and Runner beans together, spiced up with some fresh ginger.

A lovely combination of fresh flavours and crunchy textures, great for a quick lunch


To serve 2
Put all of the ingredients in a salad bowl, mix and serve

1/2 small watermelon chopped into approx 3cm chunks
10 tender runner beans sliced thinly on the diagonal
1 (raw) corn on the cob, peeled and corns cut off
Dessert spoon of finely chopped fresh ginger
1 medium carrot finely sliced with a veg peeler or mandolin
Sprouted sunflower seeds

Mix everything in a big serving bowl, perhaps drizzle some good quality olive oil or Udo’s oil over and serve.

Eating this salad will leave you feeling full but light!
